The journey into MIL begins beyond the walls of the dining room, where six carefully curated moments unfold across eight distinct ecosystems. Together, they form a deeply immersive exploration of people, landscapes, knowledge, history and ingredients—rooted in place and elevated by purpose.
01. Your experience opens at the extraordinary archaeological site of Moray, whose enigmatic circular terraces served as a key source of inspiration for Virgilio Martínez and his team. From this dramatic vantage point, you’ll take in sweeping Andean views as a specialist anthropologist offers insight into Moray’s role within the Inca Empire, revealing its sophisticated relationship with agriculture, climate and experimentation.
02. The journey continues to Chacra MIL, our working farmlands and the living source of the menu. Here, you’ll engage directly with ingredients that have been cultivated for centuries—touching, tasting and understanding their significance. These traditions endure thanks to the neighboring communities of Mullaka’s, Misminay and K’acllaraccay, whose careful stewardship continues to protect this agricultural heritage.
03. In the surrounding hills, a third moment unfolds on foot. As you walk through this richly biodiverse landscape, you’ll encounter native plants used for nourishment and healing. Along the way, local experts share ancestral knowledge still practised today, offering a rare insight into how land and culture remain inseparable.
04. Indoors, the immersion deepens. The Mater Table presents the ingredients that underpin MIL’s philosophy, offering a thoughtful introduction to the natural systems that sustain our relationship with the environment.
05. Nearby, a curated collection of works born from collaborations with artists, harvesters, producers and artisans reveals the transformative journey of each ingredient—showing not only its origin, but its potential.
06. The penultimate moment invites you to taste a selection of ferments and spirits crafted from tubers, legumes, cereals and roots. These beverages blend traditional techniques with contemporary interpretation, carrying stories of the past while looking firmly to the future. Inspired by all that has come before, you are then invited to take your seat at the table, where MIL’s vertical voyage unfolds—an exploration of altitude, ecology and flavor, experienced one course at a time.
